[RECIPE] Keto Stuffed Peppers

These stuffed peppers are a satisfying and flavorful meal that's packed with protein and healthy fats.

Made with ground beef, cauliflower rice, and cheese, they're a delicious and easy keto dinner.


4 bell peppers, halved and seeded
1 pound ground beef
2 cups cauliflower rice
1/2 cup diced onion
2 cloves garlic, minced
1 cup shredded cheddar cheese
Salt and pepper to taste


  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned.
  3. Add the cauliflower rice, onion, and garlic to the skillet and cook until the onion is translucent and the cauliflower rice is tender.
  4. Remove the skillet from the heat and stir in 3/4 cup of the shredded cheddar cheese. Season with salt and pepper to taste.
  5. Arrange the pepper halves in a baking dish and fill each one with the ground beef mixture. Top each pepper with the remaining shredded cheddar cheese.
  6. Bake the peppers for 25-30 minutes, or until the cheese is melted and the peppers are tender.
