[RECIPE] Keto Stuffed Peppers
These stuffed peppers are a satisfying and flavorful meal that's packed with protein and healthy fats.
Made with ground beef, cauliflower rice, and cheese, they're a delicious and easy keto dinner.
Ingredients:
4 bell peppers, halved and seeded
1 pound ground beef
2 cups cauliflower rice
1/2 cup diced onion
2 cloves garlic, minced
1 cup shredded cheddar cheese
Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned.
- Add the cauliflower rice, onion, and garlic to the skillet and cook until the onion is translucent and the cauliflower rice is tender.
- Remove the skillet from the heat and stir in 3/4 cup of the shredded cheddar cheese. Season with salt and pepper to taste.
- Arrange the pepper halves in a baking dish and fill each one with the ground beef mixture. Top each pepper with the remaining shredded cheddar cheese.
- Bake the peppers for 25-30 minutes, or until the cheese is melted and the peppers are tender.
