[RECIPE] Grilled Cobb Salad
This grilled Cobb salad is a delicious and filling lunch that's perfect for those on the keto diet.
Packed with protein and healthy fats, this salad is topped with grilled chicken, bacon, hard-boiled eggs, avocado, and blue cheese dressing.
Ingredients:
2 chicken breasts
6 cups mixed greens
6 slices cooked bacon
2 hard-boiled eggs, chopped
1 avocado, sliced
1/4 cup blue cheese crumbles
1/4 cup olive oil
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions:
- Season the chicken breasts with salt and pepper and grill until fully cooked. Let it cool for a few minutes and slice it into pieces.
- In a large bowl, toss the mixed greens with the olive oil, apple cider vinegar, Dijon mustard, and salt and pepper to taste.
- Add the chicken, bacon, eggs, avocado, and blue cheese on top of the greens.
- Serve with your favorite dressing, or make your own blue cheese dressing by whisking together 1/4 cup sour cream, 1/4 cup mayonnaise, 1/4 cup crumbled blue cheese, and salt and pepper to taste.
