[RECIPE] Grilled Cobb Salad

This grilled Cobb salad is a delicious and filling lunch that's perfect for those on the keto diet.

Packed with protein and healthy fats, this salad is topped with grilled chicken, bacon, hard-boiled eggs, avocado, and blue cheese dressing.

Ingredients:

2 chicken breasts
6 cups mixed greens
6 slices cooked bacon
2 hard-boiled eggs, chopped
1 avocado, sliced
1/4 cup blue cheese crumbles
1/4 cup olive oil
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
Salt and pepper to taste

Instructions:

  1. Season the chicken breasts with salt and pepper and grill until fully cooked. Let it cool for a few minutes and slice it into pieces.
  2. In a large bowl, toss the mixed greens with the olive oil, apple cider vinegar, Dijon mustard, and salt and pepper to taste.
  3. Add the chicken, bacon, eggs, avocado, and blue cheese on top of the greens.
  4. Serve with your favorite dressing, or make your own blue cheese dressing by whisking together 1/4 cup sour cream, 1/4 cup mayonnaise, 1/4 cup crumbled blue cheese, and salt and pepper to taste.
